Suite au succès de la Ballantine’s Blending Experience organisée pour Pernod Ricard à l’aéroport Roissy-Charles-de- Gaulle, Apanache – qui s’investit toujours corps et âme pour ses clients – a décidé de prolonger l’expérience et de s’immerger encore un peu plus dans le monde du whisky !

C’est donc armée de joie et d’enthousiasme que toute l’équipe Apanache est partie pour un séminaire du 9 au 12 juin en Ecosse. Accompagnée de Ditoc, son partenaire high-tech hongkongais privilégié, elle est allée à la découverte du monde des whishy Ballantine’s et Chivas.

Ah, l’Ecosse, sa culture, ses paysages, ses lochs, sa gastronomie, ses distilleries… et un accueil royal de Pernod Ricard sur place!

Chez Apanache, on ne recule décidément devant aucun sacrifice !

Pour commencer, un peu de nature. C’est à vélo que toute l’équipe Apanache a arpenté les contrées du Speyside. Entre forêt et lochs écossais, le grand air et la bonne humeur ont ravi tout le monde. En témoignent ces quelques clichés pris au détour de pauses bien méritées. Les plus intrépides ont même gravi des rochers !

C’est ensuite à la distillerie Ballantine’s que le voyage s’est poursuivi. L’équipe Apanache a ainsi pu découvrir tout le processus de fabrication du whisky, dans des conditions exceptionnelles, dans cet établissement créé en 1826 ! Autant dire que les techniques y sont rompues, et que la visite fut enrichissante.

Brassage de l’orge et fermentation : cette première étape de fabrication est identique à celle utilisée pour la production de bière, en quelque sorte la petite cousine du whisky ! Le produit obtenu est ensuite distillé, pour obtenir la « gnole ». Les superbes alambics de la Glendronach Distillery laissent déjà présager de sa qualité !

Enfin, dernière étape et pas des moindres, la transformation en whisky via le vieillissement en tonneaux. Sont utilisés des fûts de bourbon recyclés provenant des Etat-Unis, ou des fûts espagnols utilisés pour la production d’alcool de cerise. Ces fûts bien spécifiques vont permettre d’obtenir cette saveur propre au blend écossais, même si le goût et la couleur des whiskys diﬀèrent bien sûr également en fonction de l’âge, de la région… Le poète français Emile Augier disait que la vérité sort mieux d’un ton au que d’un puits, et on ne demande qu’à le croire !

Pour une blending expérience vraiment complète (quand on vous dit que chez Apanache, on va au bout des choses !), l’équipe a pu finalement profiter d’une belle séance de dégustation : des verres composés à partir de bouteilles de whiskys de diﬀérentes régions. Objectif : trouver le pourcentage de chaque bouteille dans le whisky ainsi obtenu. Encore une fois, l’implication de toutes (!) et tous a été totale !

Point d’orgue du séminaire en Ecosse, une magnifique soirée écossaise à la maison Chivas de Keith, dans le Banﬀshire. Cette fois-ci, l’aventure était… dans l’assiette ! L’équipe Apanache a pu ainsi déguster un traditionnel et non moins délicieux haggis, la fameuse panse de brebis farcie. Et pour l’occasion, ces messieurs avait enfilé leur plus beau kilt !

Place à la cérémonie traditionnelle du haggis ! Sur un air de cornemuse, le plat est amené. Un poème est récité, puis le haggis est coupé en deux et arrosé de whisky. Il repart ensuite en cuisine. C’est le moment de la coupelle de l’amitié : on la boit cul-sec, on la renverse ensuite sur la tête ! Eh oui, il y avait une bonne raison à cette photo…

Le haggis revient. Il est prêt. Reste à le déguster… et il est divin !
